This cinnamon apples breakfast power bowl recipe is my go-to comfort breakfast! These power bowls are vegan, full of protein and healthy fats, filling, and everything can be prepared the night before for easy grab and go on a busy morning.

This recipe is all about the apples! Please see my recipe for stove top cinnamon apples. They are quick and easy to make and can be prepared while the quinoa is cooking. You can use any yogurt that suits you. My son’s preferred dairy free yogurt is the coconut- milk, vanilla flavored Oui by Yoplait. He used to like the so delicious brand, but prefers the consistency of Oui. If I’m making this for myself, I use a non fat, unsweetened greek style yogurt for extra protein and the extra ‘tang’ of an unsweetened yogurt. This is one where you use the ingredients that fit your lifestyle and allergies, but you can also assemble to provide everyone with their preferred yogurt or yogurt alternative.

Prep time: 2 minutes

Cook time: 15 minutes

Power Bowl Ingredients

  • 1 batch of stove top cinnamon apples
  • 1/2 cup dry quinoa
  • 1 cup water
  • 1-1/3 cup yogurt or yogurt alternative
  • 20 pecans, chopped for garnish

Power Bowl Instructions

  1. Combine dry quinoa and water in a small sauce pan. Bring to a boil, cover, reduce heat and simmer for 15 minutes, or until tender and liquid is fully absorbed.
  2. Prepare your stove top cinnamon apples while the quinoa cooks
  3. Assemble your bowls. Add 1/3 cup of yogurt of choice in a bowl. Top with 1/4 cup cooked quinoa, 1/2 cup of cinnamon apples and pecans, if using.
