Quick Pickled Red Onions

Delicious and quick pickled red onions in 30 minutes with only 6 ingredients and no actual cooking. Up your salad, sandwich, taco and burger game… in fact, the possibilities are nearly limitless! It’s crucial that you slice the onion very thin- I highly recommend that you use a mandoline. I prefer a wider mandoline to ensure that it can accommodate larger produce.

Feel free to play with the flavors of this quick pickled red onions recipe. Below are a few ideas:

  • Garlic: throw in a few cloves of garlic to take the flavor up a notch
  • Spicy: to really kick the spice up a notch, a few slices of fresh jalapeno will do the trick. If you’re not quiet that adventurous, try 1/4 teaspoon of crushed red pepper flakes. Or, if you just want them a bit peppery, toss in a few whole peppercorns
  • Sweet: substitute some of the vinegar with citrus (e.g. orange juice) and increase the maple syrup (x2).
  • Herby goodness: know that you will be making an italian sub? Throw in some fresh basil and oregano (or even dried Italian Seasoning). I really enjoy the combination with cilantro on a vegetable tostada
  • Add the veggies: Particularly when cooking Mexican dishes, I mix sliced radishes in with the sliced onions

Pickled Onion Ingredients

  • 1 red onion, thinly sliced (ideally with a mandoline)
  • 1 tsp sea salt
  • 2 Tbsp pure maple syrup
  • 1/3 cup apple cider vinegar
  • 1/3 cup distilled white vinegar
  • 1/4 cup water

Pickled Onion Instructions

  1. Add the onions to a jar or tall storage container (mason jars work great for this).
  2. Add the salt and maple syrup. Pour vinegar and water over the onions. Mix well to combine.
  3. Place the onions in the refrigerator for at least 30 minutes and serve.
  4. Extra onions can be stored in the refrigerator for 2 weeks for other uses. Bonus- the flavor gets better the longer it sits
