This acai chia pudding recipe is perfect for a healthy(ish), allergen friendly, grab and go breakfast. Don’t you just love an easy, high protein breakfast on a hectic weekend morning.

So why chia pudding? Chia is high in fiber, protein and healthy facts- all incredibly important for the body and to keep you satiated. Combine this with dairy- free milk and fruit, you get a well rounded breakfast that’s easily meal prepped for the week.

First step, make the chia pudding. In two mason Jars combine 2 tablespoons of chia seeds and scant 1/2 cup of milk in each jar, stirring to combine. Let rest for 2 minutes and check to see that the seeds are beginning to gel. Stir once more and then rest in the refrigerator for at least 2 hours, or overnight.

Make the acai puree, either the morning of or night before. In a blender combine 1/3 cup strawberries, 1/2 of a small banana, 1/2 of a 100 g frozen acai packet and 1/2 teaspoon of agave syrup. Blend until smooth. When ready to eat, divide the acai in equal portions and pour over the chia pudding. Top with fresh berries, chopped fresh herbs (I like basil or mint) and a drizzle of agave syrup. And voila, you have a fresh, filling breakfast… even if you’re running late.

Acai Chia Pudding Ingredients

  • 4 tablespoons chia seed, divided
  • Scant 1 cup diary free milk, divided
  • 1/3 cup strawberry
  • 1/2 small banana
  • 1/2 frozen 100 gram acai packet
  • 1/2 teaspoon agave, plus more for drizzle
  • 1/2 cup mixed fresh berries, divided
  • 1 teaspoon chopped fresh herbs, like basil or mint, divided

Acai Chia Pudding Instructions

  1. Add 2 tablespoons of chia seeds and scant 1/2 cup of diary free milk to each of two mason jars, stir to combine. Let rest for 2 minutes and check to see that they chia seeds are beginning to gel. Stir again and place in the refrigerator to rest for at least 2 hours, or overnight.
  2. In a blender add strawberries, banana, acai packet and agave syrup, blend until smooth.
  3. When ready to serve, pour half of the acai puree over each of the chia puddings. Top with half of the fresh berries and herbs. Top with a drizzle of agave syrup, if desired.
